Breakfast is my favorite meal of the day- I go to bed looking forward to what I'm going to eat in the morning! Lately I've been having toast almost every morning, so I decided to share a few recipe ideas with you! These don't just have to be for breakfast, I would eat these for lunch or a mid-day snack too! Or make these for your next brunch party and I'm sure you'll have everyone instagramming their food. ;)
There are so many ways to get creative with toast, it doesn't have to be plain peanut butter on bread! I feel the best if I start my day eating fresh fruits and vegetables, so I usually pull out whatever I have in the fridge and see what I can make!
My all time favorite breakfast is avocado toast. I could eat this all day long and never get tired of it. For my version, you'll need avocado, a quarter of a lime, a bit of diced red onion, arugula, and salt and pepper to taste.
Just mix all the ingredients together and spread it on your toasted bread, then garnish with some arugula leaves! I love the slight spiciness of the arugula paired with the creamy avocado, so good! Another tip: sprinkle a little nutritional yeast on top for a bit of a cheesy flavor!
Another toast I've been loving is a slightly odd combination that is surprisingly delicious! You'll need a few radishes, arugula, vegan cream cheese, vegan mayo, and salt and pepper to taste.
Mix equal parts cream cheese and mayo together with the salt and pepper. Spread the mixture on your bread, and layer thinly sliced radishes. Once again, garnish with arugula! As with the last recipe, I like pairing the creaminess of the mayo/cream cheese with the spicy radishes and greens. If you're not a fan of mayo, feel free to leave that out!
Although I usually crave more savory foods in the morning, this last recipe is a sweeter one that is just as delicious! Spread the vegan cream cheese on your bread, layer some slices of apple, and sprinkle pomegranate seeds on top!
